Chef Rick made his way back to The Mansion garden for another yummy Tuesday recipe. Bruschetta is an all-time favorite appetizer. If you’ve never made this classic Italian app, you’ll find learning how to make Chef Rick’s Tomato Basil Bruschetta is easy, delicious and fresh.
1 to 1 ½ LBS. Garden Ripe Tomato
6 Cloves of Garlic
1 Small Red Onion OR 2 or 3 Baby Shallots
12 Leaves of Fresh Basil
½ Cup Olive Oil
Splash of Balsamic Vinegar
Salt and Pepper to Taste
Chop, tomatoes, garlic, red onion, basil, and place in a bowl.
Add olive oil, salt and pepper, and balsamic vinegar. Toss together with a spoon till combined.
Serve with grilled bread as an appetizer, or topped your favorite fish or chicken, and enjoy!
