We have a special treat in store for you today, fresh from The Mansion garden. Today, Chef Rick shows you how to make your very own Refrigerator Bread and Butter Pickles.
1 ½ Pounds Cucumbers, Sliced
1 ½ TBSP Kosher Salt
1 Cup Onions, Thinly Sliced
1 Cup Granulated Sugar
1 Cup White Vinegar
½ Cup Apple Cider Vinegar
½ Cup Brown Sugar
1 ½ TSP Mustard Seed
½ TSP Celery Seed
1/8 TSP Ground Turmeric
Combine cucumbers and salt in a medium sized bowl, cover and chill for about 1 hour.
Place cucumbers in a colander and rinse under cold water, drain well and return to bowl and add onions.
Combine the granulated sugar, white vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds, and turmeric in a sauce pan over medium heat and bring to simmer until the sugar dissolves.
Pour the hot vinegar mixture over cucumber mixture; let stand at room temperature for 1 hour. Cover and refrigerate 24 hours. Store in an airtight container in refrigerator for up to 1 month.
